Japanese Light and Fluffy Simnel Cake

 


This recipe shows you how to make a Japanese light and fluffy Simnel Cake. Ideal for Easter or Mother’s Day. A modern cake recipe. A combination of cultures: 100g self-rising flour 75g melted butter or margarine. 1tsp vanilla extract 6 large eggs separated. 80g caster sugar 1tsp mixed spice 1 tsp of lemon zest 50 – 80 g of mixed fruit/peel. Chopped up as fine as possible. The finer and powdery the fruit the better freeze dried fruit might be best. Bake on the lowest shelf inside a tin of hot water, (water bath) on the middle shelf of an oven. This will create steam. Bakes for around an hour 160C
